This is going to be a bit of a weird post.<\/p>\n<h4>Gluten Free Cream Cheese Pie Crust<\/h4>\n<p>Recently, I did an update to the gluten-free pie crust recipe I\u2019ve been using for about a decade now, with some slight changes to the flours and technique.<\/p>\n<p>This new gluten-free pie dough uses simple techniques to make a flaky pie crust that bakes up beautifully golden brown.  <\/p>\n<p>It\u2019s the perfect gluten free homemade pie crust - easy to make, easy to handle, tasty ... all on top of producing that nicely flaky crust. <\/p>\n<p>If handled properly, of course. What\u2019s the difference, and which should you use?<\/p>\n<p>Both are fantastic.  <\/p>\n<p>The Cream Cheese Pie Crust is a bit more solid \/ less flaky, with a richer taste, and it\u2019s easier to work with. <\/p>\n<p>The Perfect Pie Crust is much flakier - definitely passing for a regular pie crust - but it\u2019s also a bit more delicate to work with.<\/p>\n<p>While both make fantastic pie crusts, I prefer using the cream cheese one for fussier work, like tarts, turnovers, braiding, etc - it\u2019s more forgiving to work with.  <\/p>\n<p>If you aren\u2019t experienced with making pie crusts, I\u2019d recommend using the cream cheese one.\n<\/p><\/div>\n<div>So.  <\/p>\n<p>This post was written about the cream cheese crust.  Most of what\u2019s said about it - aside from the fat used and the techniques - apply to the \u201cperfect pie crust\u201d version as well.<\/p>\n<p>I am tacking on the new recipe walk-through at the very end of this post, as text and photos. It helps act as a bit of a binder, strengthening the dough - something that gluten normally does.<\/p>\n<p>That strength is important, as it allows the structure of the dough to hold up around the its of fat. You should still be able to find most of them in your local grocery store.<\/p>\n<p><i>This recipe is enough to make 2 single-crust pies, or one double-crust pie<\/i><\/p>\n<h4>Flour Mixture<\/h4>\n<p>As with all of my gluten-free baking, I do NOT use all purpose gluten free flour blends when making pies. <\/p>\n<p>The best gluten-free flour blend, IMHO, will always be the one that was designed specifically for the recipe it\u2019s being used for.  <\/p>\n<p>While regular all purpose flour has a wide range of abilities and uses - it\u2019s wildly forgiving - the same can\u2019t really be said of the GF blends.<\/p>\n<p>When you use the right ingredients for a particular recipe - taking flavour, properties, and outcome into account - it makes all the difference.<\/p><\/div>\n<div>Anyway, enough soap box for now.   For this recipe, I finally settled on a combination of:<\/p>\n<p><a href=\"https:\/\/amzn.to\/3KvwuNt\" rel=\"sponsored nofollow noopener\" target=\"_new\">White Rice Flour<\/a> (can sub <a href=\"https:\/\/amzn.to\/3KgU7cu\" rel=\"sponsored nofollow noopener\" target=\"_new\">Brown Rice Flour<\/a>)<br \/>\n<a href=\"https:\/\/amzn.to\/35MJtLf\" rel=\"sponsored nofollow noopener\" target=\"_new\">Light Buckwheat Flour<\/a><br \/>\n<a href=\"https:\/\/amzn.to\/3Mmp1lc\" rel=\"sponsored nofollow noopener\" target=\"_new\">Sorghum Flour<\/a><br \/>\n<a href=\"https:\/\/amzn.to\/3pz0dg2\" rel=\"sponsored nofollow noopener\" target=\"_new\">Sweet Rice Flour<\/a><br \/>\n<a href=\"https:\/\/amzn.to\/3MwtguX\" rel=\"sponsored nofollow noopener\" target=\"_new\">Corn Starch<\/a> (Can sub <a href=\"https:\/\/amzn.to\/3pyyYSW\" rel=\"sponsored nofollow noopener\" target=\"_new\">Potato Starch<\/a>)<br \/>\n<a href=\"https:\/\/amzn.to\/3K890xs\" rel=\"sponsored nofollow noopener\" target=\"_new\">Xanthan Gum<\/a>\n<\/div>\n<div>\n<h4>The Cold Fat<\/h4>\n<p>In this recipe, we actually have 3 sources of fat - and they all perform slightly different tasks.<\/p>\n<p>The cream cheese is finely blitzed into the flour mixture, to evenly distribute fat throughout and help with structure.  It does NOT melt or cause air pockets.<\/p>\n<p>The cold unsalted butter is used in the traditional way.  Small pieces of cold butter are dispersed throughout the dough to melt, steam, and cause air pockets.<\/p>\n<p>Finally, the egg helps a little with fat content, but also brings structure and moisture.<\/p><\/div>\n<div>\n<h4>Everything Else<\/h4>\n<p>Rounding out this recipe, we have:<\/p>\n<p>2 tablespoon Packed Brown Sugar<br \/>\nSalt<br \/>\nCold Water<\/p>\n<p>No real notes there, aside from \u201cactually use really cold water\u201d. <\/p>\n<p>You want to prevent softening the butter as much as possible, and room temperature water does not help you!\n<\/p><\/div>\n<p><img decoding=\"async\" src=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2.jpg\" alt=\"A close up view of a lattice topped pie, made with a gluten-free pie crust.\" width=\"1200\" height=\"1800\" class=\"alignnone size-full wp-image-43758\" srcset=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2.jpg 1200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-200x300.jpg 200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-683x1024.jpg 683w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-768x1152.jpg 768w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-1024x1536.jpg 1024w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-720x1080.jpg 720w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-360x540.jpg 360w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-2-180x270.jpg 180w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<div>\n<h2>Equipment<\/h2>\n<p>Aside from bowls and measuring implements, you\u2019ll only need a few really basic pieces of equipment to make this homemade pie crust recipe:<\/p>\n<h4>Rolling Pin<\/h4>\n<p>While any rolling pin will do - and I used to make this with a wooden one that was at least a couple decades old.<\/p>\n<p>I now use a <a href=\"https:\/\/amzn.to\/3IJ6Jsc\" rel=\"sponsored nofollow noopener\" target=\"_new\">Rolling pin with adjustable thickness guides<\/a>, and love it - that link goes to the one I have.<\/p>\n<p>Not only is it perfect for getting a perfectly even roll to exactly the thickness I want - \u215b\"- it also comes with a silicone mat that is super handy for rolling it out on.<\/p>\n<p>I use the round templates on it not only for rolling the dough out, but for tracing a parchment circle out - more on that in a bit, though!\n<\/p><\/div>\n<div>\n<h4>Pastry Blender<\/h4>\n<p>When making the second version (non-cream cheese version) of this pie crust recipe, I recommend having a pastry cutter.<\/p>\n<p>This is what\u2019s used to cut the lard into the flour mixture, distributing small pieces of fat throughout the dough.<\/p>\n<p>Honestly, this is fairly optional. I use a potato masher now, and I\u2019ve been known to use a couple of forks, on occasion.  It\u2019s all good. <\/p><\/div>\n<div>\n<h4>Pie Plate<\/h4>\n<p>Go with whatever your pie recipe is calling for, but generally speaking you\u2019re going to want a 9-inch pie pan<\/p>\n<p>I find that pies cook more evenly and bake up nicer in glass pans, so I ended up getting rid of my metal pie plates. Blitz a few more times - just long enough to start to bring it together as a dough \u2013 you may need to use a little more water. Fold the edge of the upper crust under - encasing the edge of the bottom crust.<\/p>\n<p>Flute the crust as desired, brush the top of the pie with egg wash (info below).<\/p>\n<p>Use the tip of a sharp knife to cut a few vents into the pie crust, to let the steam escape.\n<\/p><\/div>\n<div>\n<h5>Constructed Top Crust<\/h5>\n<p>This category of pie includes all manner of lattice top pies, layered shapes, etc.  <\/p>\n<p>Cut the rolled out second crust as you need for your intended design - strips for lattice, whatever shapes you\u2019re doing, etc.<\/p>\n<p>Take your filled pie out of the fridge, lay out your upper crust pieces however you need them.  <\/p>\n<p>Trim the top crust pieces to about a \u00be\" overhang.  Fold the edge of the upper crust pieces under - encasing the edge of the bottom crust.<\/p>\n<p>Flute the crust as desired, brush the top of the pie with egg wash (info below).<\/p><\/div>\n<div>\n<h5>Lattice Top Pies<\/h5>\n<p>As a quick guide, here\u2019s how I do lattice top pies:<\/p>\n<p>Lay out one set of strips across the pie filling. This crimps the edge of the pie crust into sort of a wavy \u201cW\u201d  type shape, in between the 3 fingers.\tThen, I crimp edges the whole way around the pie crust.<\/p><\/div>\n<div>\n<h4>Prebaked Crust<\/h4>\n<p>Some recipes call for a prebaked crust - Usually if you\u2019re doing a pie with a filling that doesn\u2019t require baking*.  In those cases, you\u2019ll need to blind bake this crust.<\/p>\n<p>Blind baking is when you construct your single pie crust (as directed above), then fill it with *something* before baking.<\/p>\n<p>The idea is that the \u201csomething\u201d takes the place of the filling - temporarily - to help the crust bake properly.  <\/p>\n<p>Without something doing that, your pie crust will behave weird - lots of obnoxious bubbles, the sides of the crust slipping down \/ shrinking, etc.<\/p>\n<p>You can buy actual <a href=\"https:\/\/amzn.to\/3pwJE4j\" rel=\"sponsored nofollow noopener\" target=\"_new\">Pie Weights<\/a> for this, or just use dried beans.  Either way, you\u2019ll line your constructed single crust pie with parchment paper or aluminum foil, and fill it up with whichever you\u2019re using.  <\/p>\n<p>Just be sure to fill it right up to the edge of the pie pan, or you can get some shrinkage.<\/p><\/div>\n<div>Anyway, as far as specifics go:<\/p>\n<p>Roll, set, trim, and crimp the edge  your pie as discussed earlier, then stick it in the freezer for 30 minutes.<\/p>\n<p>Once it\u2019s thoroughly chilled, preheat your oven to 375 F.<\/p>\n<p>When the oven is ready, take the pie plate and crust out of the freezer, and line it with parchment or foil.<\/p>\n<p>Fill the pie with beans or pie weights, right up to the edge of the pie plan.<\/p><\/div>\n<div>Transfer the prepared pie pan to the preheated oven, bake for 15-20 minutes, or until the exposed crust edges are just starting to turn lightly golden.<\/p>\n<p>See the pie recipe you\u2019re using - generally speaking - you\u2019re going to want the pie to cool to room temperature before filling it.  <\/p>\n<p>If you use it hot, you can trap the heat - as steam - under the filling, and end up with a soggy crust.<\/p>\n<p>Personally, I like to  - carefully - remove the lining and weights soon after the pie crust is removed from the oven.  <\/p>\n<p>While it\u2019s easier - and a bit safer - to handle when it\u2019s cool, the beans \/ weights can continue cooking the crust, as they can retain heat.<\/p>\n<p><i>* Note: In other situations - like when dealing with a custard pie, or an especially juicy filling on a fruit pie - the recipe will have you pre-bake the crust as part of their instructions. Wrap tightly in plastic wrap, trying to exclude any trapped air.  <\/p>\n<p>Transfer wrapped dough ball(s) to a freezer bag, and remove most\/all of the air from the bag.<\/p>\n<p>Freeze for up to 3 months, taking out a crust or two as needed.<\/p>\n<p>To use, let wrapped dough thaw in the fridge for a day, then use as directed above, or in the recipe you\u2019re using.\n<\/p><\/div>\n<p><img decoding=\"async\" src=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9.jpg\" alt=\"A close up photo of a gluten free pumpkin pie crust.\" width=\"1200\" height=\"1800\" class=\"alignnone size-full wp-image-43907\" srcset=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9.jpg 1200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-200x300.jpg 200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-683x1024.jpg 683w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-768x1152.jpg 768w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-1024x1536.jpg 1024w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-720x1080.jpg 720w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-360x540.jpg 360w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-9-180x270.jpg 180w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<div>\n<h4>The Parchment Paper Trick<\/h4>\n<p>Until fairly recently, I haven\u2019t been fond of making pies, mostly because I hate SERVING them.<\/p>\n<p>In theory, the butter \/ fats in the crust should be enough to self-grease the pan, allowing for an easy release.  <\/p>\n<p>Invariably, though, pie filling would seep down somehow, and basically glue the bottom of the crust to the pin tin.  <\/p>\n<p>Miserable.<\/p><\/div>\n<div>So, I\u2019ve taken to lining my pie plates with parchment, and making pies is SO much nicer, now!<\/p>\n<p>For a 9-inch pie plate, I cut a round of parchment paper that\u2019s 11 or 12\" in diameter, then spray the pie plate with baking spray.<\/p>\n<p>Then I center the parchment circle over the pan, and press it down into the bottom, smoothing any trapped air out of the sides. (The spray helps secure the paper to the plate!).<\/p>\n<p>From there, I cut little slits from the outer edge of the parchment circle, down to the bottom edge of the inside of the pan.  I\u2019ll space them about 1.5\" apart, to take out the excess fullness.<\/p>\n<p>I lay all of the strips flat - slightly overlapping each other - and smooth everything out before adding the rolled pie dough.<\/p><\/div>\n<p><img decoding=\"async\" src=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5.jpg\" alt=\"A 5 part image showing a parchment paper round being fit into a pie plate.\" width=\"1200\" height=\"1800\" class=\"alignnone size-full wp-image-43769\" srcset=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5.jpg 1200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-200x300.jpg 200w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-683x1024.jpg 683w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-768x1152.jpg 768w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-1024x1536.jpg 1024w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-720x1080.jpg 720w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-360x540.jpg 360w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-pie-crust-recipe-5-180x270.jpg 180w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/p>\n<div>Once the dough is in, I peek behind the crust the whole way, ensure it\u2019s all still laying flat.<\/p>\n<p>It\u2019s a great way to ensure that each slice comes out perfectly!<\/p>\n<p>You can leave the parchment in, or carefully pull it out from under the pie, after the first slice is cut.<\/p><\/div>\n<p><img decoding=\"async\" src=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9.jpg\" alt=\"A hand holds the baked round of parchment paper, pulled out from under the baked pie.\" width=\"1600\" height=\"1200\" class=\"alignnone size-full wp-image-43923\" srcset=\"https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9.jpg 1600w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-300x225.jpg 300w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-1024x768.jpg 1024w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-768x576.jpg 768w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-1536x1152.jpg 1536w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-500x375.jpg 500w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-720x540.jpg 720w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-360x270.jpg 360w, https:\/\/beyondflourblog.com\/wp-content\/uploads\/2022\/08\/gluten-free-cream-cheesepie-crust-recipe-9-180x135.jpg 180w\" sizes=\"(max-width: 1600px) 100vw, 1600px\" \/><\/p>\n<div>\n<h4>Handling<\/h4>\n<p>While developing gluten isn\u2019t an issue with these recipe, you STILL don\u2019t want to overwork the dough.<\/p>\n<p>In this case, overworking the dough can prematurely emlt\/soften the butter, distribute it throughout the dough, and not allow for air pockets to form - leading to a more dense crust.<\/p>\n<p>So, handle the dough as little as possible, at every step after adding the water.  <\/p>\n<p>When you do add the water, gently mix it with a wooden spoon, rubber spatula, or by hand - not with a food processor or stand mixer.  <\/p>\n<p>After adding the water, don\u2019t knead the dough, so much as gather it together.<\/p>\n<p>When you roll dough out, make sure you\u2019re starting with a clean surface, and dust that work surface with a little corn starch.  This prevents sticking, which in turn prevents stretching.<\/p>\n<p>You don\u2019t want to use too much corn starch, though - it\u2019ll dry your dough out and lead to overworking it.  Use a little bit at a time, and re-dust as needed.<\/p>\n<p>Also? Depending on the type of rolling pin you\u2019re using, you might want to lightly dust THAT with flour as well. <\/p>\n<p>Finally, when you\u2019re putting the rolled dough into the pie plate - or transferring top crust pieces - try to handle it in a way that prevents the dough from stretching out of shape.\n<\/p><\/div>\n<div>\n<h4>Chilling<\/h4>\n<p>Chilling is an important step in pie making, as it prevents the fat from melting prematurely, and just incorporating into the flour.  <\/p>\n<p>Yes, it\u2019s ALL about those fat pockets!<\/p>\n<p>So, chill your butter and cream cheese - or lard, depending on the recipe - ahead of time. <\/p>\n<p>If you\u2019re using a metal rolling pin, chilling it can help - the metal ones absorb heat from your hands, so best to start out cold.<\/p><\/div>\n<div>Unless the pie recipe you\u2019re making actually relies on starting with a hot filling - like lemon meringue pies - make sure your pie filling is thoroughly chilled before adding it to your (chilled!) pie crust.<\/p>\n<p>On that note, have your pie filling made and chilled ahead of time, before you even roll out your crust.  <\/p>\n<p>If logistics mean rolling your bottom crust before getting the filling ready, keep the pie pan - and crust - in the fridge as you prepare that filling.<\/p>\n<p>Honestly, you can\u2019t really OVER chill the dough, especially after it\u2019s been rolled\/ set into the plate.  When it doubt, throw it in the fridge for a while.   <\/p>\n<p>You want the fat in the crust as cold as possible, when it goes into the oven.<\/p><\/div>\n<div>\n<h4>Egg Wash<\/h4>\n<p>For a shiny, golden brown finish to the top of your baked crust, I recommend doing an egg wash.<\/p>\n<p>In a small bowl or mug, whisk together 1 large egg with a Tablespoon of heavy cream (or a tablespoon of cold water) until smooth.<\/p>\n<p>Use a pastry brush to brush it over all of the exposed pie crust before putting the pie in the oven.<\/p>\n<p><i>Important Note: If you\u2019re doing a solid top crust, brush the egg wash on BEFORE cutting air vent slits.  Egg brushed on after cutting them can seal them shut when baking. <\/i>\n<\/div>\n<div>\n<h4>Pie Shield<\/h4>\n<p>If you find the edges of your pie crust browning too fast, you can take the pie out and gently wrap it with foil. based on my Great Uncle Tom\u2019s Perfect Pie crust.<\/p>\n<p>It\u2019s an all-lard pie crust recipe, passes for a gluten pie crust in taste and appearance... but is a bit fussier to work
